Eating Healthy

     Let me start out by saying that I am not the healthiest eater.  I am trying to get better though. I have cut back to almost no fast food, and I am trying to eat a lot cleaner.  Tonight for dinner my wife and I made coconut shrimp and asparagus, and it was pretty damn good if I must say. We got the recipe from my wife's good friend's blog, Newlywed Kitchen and improvised so I thought I would share with all of you.  Now this is not the most healthy thing I could of made but it wasn't to bad and I love seafood so it made sense.

COCONUT SHRIMP

what you will need
about 25-30 shrimp medium to large
3 egg whites if you want to be really healthy or we just used 2 eggs
about 3 cups of coconut- more or less depending how much you want to cover the shrimp
flour
baking soda
can of beer - you may want a few if you are like me.. one for the recipe and the rest to drink while you make
                     the meal.

preheat the oven to 450 degrees
first in a medium bowl mix the egg whites or eggs, a couple dashes of salt, a teaspoon of baking soda, 1/4 cup of flour and a 1/2 cup of beer.  This will be used as the batter, so you don't want it to be very watery, you may need to add more flour to get it to where you want it be.
next take your shrimp and dip in a bowl that just has flour in it.( we used about 3/4 cup of flour in this bowl )
after you take it out of the flour dip the shrimp in your batter.
then into a bowl filled with coconut, make sure the shrimp is covered evenly with the coconut and then set on  a cooking sheet that has been sprayed with a non sticking spray.
throw in oven and bake for about 10 minutes, flipping shrimp over at 5 minutes.
once the coconut has a nice golden brown color remove from oven and serve.

We had ours with asparagus and it was the perfect meal.... not super healthy, but not bad for you at all.

Sorry I do not have a picture for you, I am not one of those people that takes pictures of their food and posts it online..  I do need to start doing that though just so I can share with everyone on my blog.

  2. OMG, I LOVE coconut shrimp! It's SO good! My hubby is allergic to coconut, can you imagine?

    Um, you're a blogger now, you HAVE to take pictures of your food, and post it online. It's like, proper blogging technique, LOL!
